Dried Garlic Venison Sausage

This sausage is my mom’s family tradition. It has a very strong flavor, and almost black when fully dried. If I hadn’t grown up on it, I’m not sure I would eat it. But since I did, I think it’s awesome.
This will hang for a month or so until it’s nearly solid.

Mmm. I like sausage and don’t think I’d mind seeing how it’s made. I even enjoyed the “black pudding” aka blood sausage in Scotland and boudin in Louisiana…good stuff!

Hi Eric, looks like you are having a good time! I’m jealous of the picture on New Year’s Eve where you are in shorts and a T-shirt. We have about 15 inches of snow on the ground.

Hey, thats my deer! I was kind of bummed that you guys hogged it all and I didn’t get any jerky or hot sticks out of it. I want some payment to at least cover my tag and the multiple rounds I fired at it.

I grew up eating venison summer sausage. We went with the 3″ around, 4′ long giant fatty sausage for our deer. Sometimes pepperoni, jerkey, or brautwursts or something…but I will never forget the taste of that summer sausage. Didn’t know there were others out there who had similar childhood sausage tales.

Haha yes I did give it up. I was going to take any leftovers and make jerky out of it though. O well, I’m not upset, just giving you a hard time :p

Odd that following this post you have “what 200 calories looks like.” The title for this could either be “what 100,000 calories looks like” or “Wisconsin baby mobile.” You didn’t grow up with this hanging over your crib, did you?
